Ok everyone, if you thought you knew how to make bread think again! We had an activity at church taught by a woman who really knows how to make amazing bread. It was SO interesting with A LOT of information, new information. It reminded me a lot of one of my food science classes that I took at BYU where we talked about the molecular level and the chemical reactions, changes and techniques to get the desired results. Anyway, it takes a lot more time than I thought, but I'm sure as I get more versed in it I will become faster.
Kaylee (yes she is shirtless due to an accident minutes prior to finishing my bread) wanted to help roll out the dough, so I let her. She is always wanting to help and be a "big girl" any way she can.
If you would like to know this woman's techniques just go to this website: http://kneadfulthingsnow.com, click on "Bread terms to know," read that and then click on "Making Yeast Breads." This bread is the most MOIST whole wheat bread I have ever, EVER tasted. There is only whole wheat flour in it no while flour at all. Anyway, if you do decide to try this out, make the Buttermilk Whole Wheat Recipe, it will take you through the final steps after combining your biga and soaker dough (weird huh...I don't know if it's Latin, but it was to me when I heard it the first time!).
